A fresh and light orzo pasta salad with crisp vegetables, feta cheese, and a bright lemon dressing, perfect for any occasion.

Ingredients

1 cup dry orzo pasta
1 1/2 cups cherry tomatoes, halved
1 cup diced cucumber
1/3 cup finely chopped red onion
1/2 cup crumbled feta cheese
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Cook orzo in salted boiling water until tender, then drain and rinse with cold water.
  • Let orzo drain thoroughly.
  • Whisk together olive oil, lemon juice, garlic, salt, and pepper.
  • Toss orzo with dressing until evenly coated.
  • Add tomatoes, cucumber, red onion, feta, parsley, and dill.
  • Mix gently to combine.
  • Chill for at least 30 minutes before serving.

Notes

Add extra olive oil or lemon juice before serving if the salad becomes dry.
