For the chicken
2 pounds bone in skin on chicken thighs
3 tablespoons olive oil
3 tablespoons lime juice
4 cloves garlic minced
2 tablespoons low sodium soy sauce
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon chili powder
1 teaspoon salt
For the creamy green sauce
1 cup fresh cilantro packed
1 jalapeño seeded
2 cloves garlic
2 tablespoons lime juice
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
1 tablespoon olive oil
1/2 teaspoon salt
Whisk marinade ingredients in a bowl.
Coat chicken thoroughly and refrigerate at least 2 hours.
Preheat grill to medium high heat.
Grill chicken 6 to 8 minutes per side until internal temperature reaches 165°F.
Blend all sauce ingredients until smooth.
Rest chicken 5 minutes before serving.
Serve with creamy green sauce.
