6 large eggs
1/2 cup milk
1/2 cup shredded cheddar cheese
1/2 cup chopped spinach
1/3 cup diced onion
1/3 cup diced bell pepper
2 cloves garlic, minced
1/2 teaspoon paprika
1/4 teaspoon dried thyme
1/2 cup cooked turkey sausage (optional)

Instructions

  • Preheat oven to 400°F (200°C) and grease a baking dish.
  • Toss sweet potatoes with oil, salt, and pepper, then roast for 20–25 minutes.
  • Whisk eggs, milk, and seasonings in a bowl.
  • Sauté onion, bell pepper, and garlic until softened.
