This Rich Cheesy Hamburger Potato Casserole features layers of seasoned ground beef, thin-sliced potatoes, and creamy cheese sauce — baked until golden and bubbly for the perfect comfort meal.
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced (optional)
4 cups thinly sliced russet potatoes (about 3–4 medium)
1 (10.5 oz) can cream of mushroom soup
1/2 cup milk or cream
2 cups shredded sharp cheddar cheese
1 cup mozzarella or Colby Jack (optional)
Salt and black pepper, to taste
1/2 tsp paprika or garlic powder (optional)
1 tbsp butter (for greasing)
Preheat oven to 375°F. Grease a 9×13-inch baking dish with butter.
In a skillet, brown ground beef with onion and garlic. Drain grease and season with salt, pepper, and paprika.
In a bowl, whisk cream of mushroom soup with milk until smooth.
Layer 1/3 potatoes in the dish, then 1/2 the beef, a few spoonfuls of sauce, and shredded cheese. Repeat layers, ending with potatoes and cheese.
Pour remaining sauce over the top. Cover with foil.
Bake covered for 60 minutes, then uncover and bake another 20–25 minutes until golden and potatoes are fork-tender.
Let rest 10 minutes before serving.
Make ahead and refrigerate or freeze. Add spinach or mushrooms for variety. Use homemade white sauce if preferred.
