Ingredients

1 1/2 pounds baby potatoes
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 block feta
1 head garlic
1/2 teaspoon oregano
1 tablespoon lemon juice

Instructions

  • Preheat oven to 400°F.
  • Toss potatoes with oil, salt, pepper, and oregano.
  • Place feta and wrapped garlic on the pan.
  • Roast for 35–40 minutes, flipping potatoes halfway.
  • Mash roasted garlic and mix with feta and potatoes.
  • Drizzle with lemon juice and serve.
