  • 1/2 cup breadcrumbs

  • 1 egg

  • 1/4 cup grated onion or shallot

  • 2 cloves garlic, minced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup chopped parsley

  • 1 tsp dried oregano

  • 1 tsp lemon zest

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • Optional: 1 tbsp chopped fresh dill

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment.

  • In a bowl, mix all ingredients until just combined.

  • Scoop and roll into 1.5-inch balls (about 18–20 meatballs).

  • Arrange on baking sheet and bake 18–22 minutes, or until golden and internal temp reaches 165°F.
