1 lb ground chicken
1/2 cup breadcrumbs
1 egg
1/4 cup grated onion or shallot
2 cloves garlic, minced
1/4 cup crumbled feta cheese
1/4 cup chopped parsley
1 tsp dried oregano
1 tsp lemon zest
1/2 tsp salt
1/4 tsp pepper
Optional: 1 tbsp chopped fresh dill
Preheat oven to 400°F. Line a baking sheet with parchment.
In a bowl, mix all ingredients until just combined.
Scoop and roll into 1.5-inch balls (about 18–20 meatballs).
