Ingredients

  • 1 lb ground beef (85/15)

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp tomato paste

  • 1½ cups orzo pasta

  • 2½ cups beef broth

  • 1 cup crushed tomatoes or tomato sauce

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ¼ tsp black pepper

  • Pinch red pepper flakes (optional)

  • ½ cup grated Parmesan or 1 cup shredded mozzarella (optional)

  • Optional garnish: fresh parsley, basil

Instructions

  • Heat oil in a large skillet. Brown ground beef, about 6–8 mins. Drain if needed.

  • Add onion and cook 3–4 mins. Stir in garlic and cook 30 secs.

  • Mix in tomato paste, spices, and seasonings. Stir for 1 min.

  • Add orzo, broth, and crushed tomatoes. Bring to boil, then reduce to low. Cover and simmer 12–15 mins, stirring occasionally.

  • Remove from heat. Stir in cheese if using. Let sit 5 mins to thicken.

  • Garnish and serve warm.

Notes

  • Substitute with turkey or veggie ground for variation.

  • Add spinach or zucchini for extra nutrients.

  • Reheat with broth to maintain creaminess.
