A creamy, one-pot pasta dish made with ground beef, tender orzo, tomatoes, and cheese — ready in 30 minutes and perfect for a cozy night in.
1 lb ground beef (85/15)
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
2 tbsp tomato paste
1½ cups orzo pasta
2½ cups beef broth
1 cup crushed tomatoes or tomato sauce
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
Pinch red pepper flakes (optional)
½ cup grated Parmesan or 1 cup shredded mozzarella (optional)
Optional garnish: fresh parsley, basil
Heat oil in a large skillet. Brown ground beef, about 6–8 mins. Drain if needed.
Add onion and cook 3–4 mins. Stir in garlic and cook 30 secs.
Mix in tomato paste, spices, and seasonings. Stir for 1 min.
Add orzo, broth, and crushed tomatoes. Bring to boil, then reduce to low. Cover and simmer 12–15 mins, stirring occasionally.
Remove from heat. Stir in cheese if using. Let sit 5 mins to thicken.
Garnish and serve warm.
Substitute with turkey or veggie ground for variation.
Add spinach or zucchini for extra nutrients.
Reheat with broth to maintain creaminess.
