A healthy Serbian-style one-pot dish made with tender chicken, rice, and rich tomato flavors. Perfect for meal prep or cozy dinners.
500g chicken breast or thighs, cubed
1 ½ cups white rice, rinsed
1 medium onion, finely chopped
2 garlic cloves, minced
1 red bell pepper, diced
2 tbsp tomato paste
1 cup crushed tomatoes
1 ½ tsp sweet paprika
1 bay leaf
3 ½ cups chicken broth (low sodium)
2 tbsp olive oil
Salt and pepper to taste
Heat olive oil in a large pot over medium heat.
Sauté onions for 4–5 minutes until soft. Add garlic and bell pepper; cook for another 2–3 minutes.
Add chicken, season with salt and pepper, and brown on all sides.
Stir in tomato paste and paprika. Cook for 1 minute.
Add crushed tomatoes, bay leaf, and rice. Stir to combine.
Pour in broth. Bring to a boil, then cover and simmer on low for 20–25 minutes.
Turn off heat and let sit covered for 5–10 minutes. Fluff with a fork and serve.
