A healthy Serbian-style one-pot dish made with tender chicken, rice, and rich tomato flavors. Perfect for meal prep or cozy dinners.

  • 500g chicken breast or thighs, cubed

  • 1 ½ cups white rice, rinsed

  • 1 medium onion, finely chopped

  • 2 garlic cloves, minced

  • 1 red bell pepper, diced

  • 2 tbsp tomato paste

  • 1 cup crushed tomatoes

  • 1 ½ tsp sweet paprika

  • 1 bay leaf

  • 3 ½ cups chicken broth (low sodium)

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat.

  • Sauté onions for 4–5 minutes until soft. Add garlic and bell pepper; cook for another 2–3 minutes.

  • Add chicken, season with salt and pepper, and brown on all sides.

  • Stir in tomato paste and paprika. Cook for 1 minute.

  • Add crushed tomatoes, bay leaf, and rice. Stir to combine.

  • Pour in broth. Bring to a boil, then cover and simmer on low for 20–25 minutes.

  • Turn off heat and let sit covered for 5–10 minutes. Fluff with a fork and serve.
