2 pounds beef chuck roast cut into chunks
1 tablespoon oil
1 medium onion sliced
3 cloves garlic minced
2 cups low-sodium beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons all-purpose flour
1/4 cup cold water
Heat oil in a skillet over medium-high heat and brown the beef on all sides.
Transfer the beef to the slow cooker.
Add onion, garlic, beef broth, Worcestershire sauce, thyme, salt, and black pepper.
Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours.
