2 pounds beef chuck roast cut into chunks
1 tablespoon oil
1 medium onion sliced
3 cloves garlic minced
2 cups low-sodium beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons all-purpose flour
1/4 cup cold water

Instructions

  • Heat oil in a skillet over medium-high heat and brown the beef on all sides.

  • Transfer the beef to the slow cooker.

  • Add onion, garlic, beef broth, Worcestershire sauce, thyme, salt, and black pepper.

  • Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours.

  • In a small bowl whisk flour and cold water until smooth.

  • Stir the flour mixture into the slow cooker during the final 30 minutes.

  • Cook until the gravy thickens and the beef is tender.

  • Serve hot over mashed potatoes, rice, or noodles.
