Tender slow cooker chicken cooked with rice, beans, corn, and spices to create a flavorful burrito bowl.

Ingredients

pounds boneless skinless chicken breasts or thighs
1 cup long-grain white rice
1 can black beans, drained and rinsed
1 cup corn kernels
1 can diced tomatoes with green chilies
2 cups chicken broth
3 cloves garlic, minced
1 small onion, diced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1/4 cup chopped cilantro
Juice of 1 lime

Instructions

  • Lightly coat the slow cooker with oil.

  • Spread rinsed rice across the bottom.

  • Add black beans and corn over the rice.

  • Sprinkle onion and garlic over the mixture.

  • Place chicken on top.

  • Mix tomatoes, broth, chili powder, cumin, paprika, salt, and pepper.

  • Pour the mixture into the slow cooker.

  • Cover and cook on LOW for 4–5 hours or HIGH for 2½–3 hours.

  • Remove chicken, shred with forks, and return to the slow cooker.

  • Stir mixture and add lime juice and cilantro before serving.

Notes

Brown rice requires additional broth and longer cooking time.
Fresh toppings such as avocado and cheese can be added before serving.
