Tender chunks of beef and golden baby potatoes slow-cooked in a savory garlic butter sauce. A rich, comforting one-pot meal perfect for weeknights or cozy weekends.
2 lbs beef stew meat (chuck or sirloin), cut into 1.5-inch cubes
1.5 lbs baby potatoes, halved
6 cloves garlic, minced
1/2 cup unsalted butter
1/2 cup low-sodium beef broth
1 tablespoon Worcestershire sauce
1 teaspoon paprika
1/2 teaspoon onion powder
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Optional: Sear beef in batches until browned.
In a small saucepan, melt butter over low heat. Add garlic and cook 1–2 minutes. Stir in Worcestershire sauce.
Add beef and potatoes to the slow cooker. Season with salt, pepper, paprika, and onion powder.
Pour garlic butter over top. Add beef broth around sides.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
Taste and adjust seasoning. Sprinkle with fresh parsley before serving.
Add carrots or green beans for extra vegetables.
For thicker sauce, stir in a cornstarch slurry in the last 30 minutes.
Store leftovers up to 4 days; reheat gently.
