Tender chunks of beef and golden baby potatoes slow-cooked in a savory garlic butter sauce. A rich, comforting one-pot meal perfect for weeknights or cozy weekends.

  • 2 lbs beef stew meat (chuck or sirloin), cut into 1.5-inch cubes

  • 1.5 lbs baby potatoes, halved

  • 6 cloves garlic, minced

  • 1/2 cup unsalted butter

  • 1/2 cup low-sodium beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon paprika

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

  • 2 tablespoons fresh parsley, chopped

Instructions

  • Optional: Sear beef in batches until browned.

  • In a small saucepan, melt butter over low heat. Add garlic and cook 1–2 minutes. Stir in Worcestershire sauce.

  • Add beef and potatoes to the slow cooker. Season with salt, pepper, paprika, and onion powder.

  • Pour garlic butter over top. Add beef broth around sides.

  • Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours.

  • Taste and adjust seasoning. Sprinkle with fresh parsley before serving.

Notes

  • Add carrots or green beans for extra vegetables.

  • For thicker sauce, stir in a cornstarch slurry in the last 30 minutes.

  • Store leftovers up to 4 days; reheat gently.
