Tender slow cooker chicken cooked with lemon, garlic, olive oil, and Mediterranean herbs.

Ingredients

2 pounds boneless skinless chicken thighs or chicken breasts
1/2 cup chicken broth
1/4 cup olive oil
1/4 cup lemon juice
1 teaspoon lemon zest
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small red onion, sliced
1/2 cup crumbled feta cheese
2 tablespoons chopped parsley

Instructions

  • Coat the slow cooker lightly with olive oil.

  • Place chicken in the bottom of the slow cooker.

  • Mix broth, olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.

  • Pour the mixture over the chicken.

  • Add sliced red onion.

  • Cover and cook on low for 5–6 hours or high for 3–4 hours.

  • Sprinkle feta cheese and parsley before serving.

  • Serve with rice, pita, or vegetables.

Notes

Chicken thighs produce the most tender texture. Fresh lemon juice gives the dish the best flavor.
