Tender slow cooker chicken cooked with lemon, garlic, olive oil, and Mediterranean herbs.
2 pounds boneless skinless chicken thighs or chicken breasts
1/2 cup chicken broth
1/4 cup olive oil
1/4 cup lemon juice
1 teaspoon lemon zest
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small red onion, sliced
1/2 cup crumbled feta cheese
2 tablespoons chopped parsley
Coat the slow cooker lightly with olive oil.
Place chicken in the bottom of the slow cooker.
Mix broth, olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
Pour the mixture over the chicken.
Add sliced red onion.
Cover and cook on low for 5–6 hours or high for 3–4 hours.
Sprinkle feta cheese and parsley before serving.
Serve with rice, pita, or vegetables.
Chicken thighs produce the most tender texture. Fresh lemon juice gives the dish the best flavor.
