2 pounds boneless skinless chicken thighs
1/2 cup honey
1/3 cup soy sauce
1/4 cup ketchup
4 cloves garlic minced
1 tablespoon rice vinegar
1 tablespoon sesame oil
1/2 teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons water
2 green onions sliced
1 teaspoon sesame seeds optional
Place chicken thighs in the slow cooker.
Mix honey, soy sauce, ketchup, garlic, vinegar, sesame oil, and pepper.
Pour sauce over the chicken.
Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
Remove the chicken and shred or slice it.
Mix cornstarch with water to create a slurry.
Stir the slurry into the slow cooker sauce.
Cook for another 10–15 minutes until thickened.
Return chicken to the sauce and coat evenly.
Garnish with green onions and sesame seeds before serving.
Chicken thighs stay especially tender during slow cooking. Add vegetables during the final stage of cooking if desired.
