A cozy, flavorful one-pot slow cooker meal made with tender chicken, fluffy rice, lemon, and herbs. Perfect for weeknight dinners or meal prep.
1½ lbs boneless skinless chicken thighs or breasts
1 cup long grain white rice (uncooked)
2½ cups chicken broth
Juice and zest of 1 lemon
1 small onion, finely chopped
3 garlic cloves, minced
1 tsp dried thyme
1 tsp dried parsley
½ tsp dried rosemary
2 tbsp butter or olive oil
Salt and pepper to taste
Optional: peas, spinach, Parmesan, fresh herbs for garnish
Season chicken with salt, pepper, and a sprinkle of herbs. Optional: brown in skillet first.
Add rice, onion, garlic, lemon zest, half the lemon juice, herbs, butter/oil, and broth to slow cooker. Stir.
Place chicken on top. Cover and cook on low for 4–5 hours or high for 2½–3 hours.
Drizzle with remaining lemon juice. Fluff rice gently with a fork.
Stir in peas, cheese, or extra herbs if desired. Let sit uncovered 5–10 minutes before serving.
