A cozy, flavorful one-pot slow cooker meal made with tender chicken, fluffy rice, lemon, and herbs. Perfect for weeknight dinners or meal prep.

Ingredients

  • lbs boneless skinless chicken thighs or breasts

  • 1 cup long grain white rice (uncooked)

  • 2½ cups chicken broth

  • Juice and zest of 1 lemon

  • 1 small onion, finely chopped

  • 3 garlic cloves, minced

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • ½ tsp dried rosemary

  • 2 tbsp butter or olive oil

  • Salt and pepper to taste

  • Optional: peas, spinach, Parmesan, fresh herbs for garnish

Instructions

  • Season chicken with salt, pepper, and a sprinkle of herbs. Optional: brown in skillet first.

  • Add rice, onion, garlic, lemon zest, half the lemon juice, herbs, butter/oil, and broth to slow cooker. Stir.

  • Place chicken on top. Cover and cook on low for 4–5 hours or high for 2½–3 hours.

  • Drizzle with remaining lemon juice. Fluff rice gently with a fork.

  • Stir in peas, cheese, or extra herbs if desired. Let sit uncovered 5–10 minutes before serving.
