Tender slow cooker chicken cooked in a sweet chili garlic sauce with soy sauce and ginger.
2 pounds boneless skinless chicken thighs or chicken breasts
1 cup sweet chili sauce
1/4 cup soy sauce
1/4 cup honey
2 tablespoons rice vinegar
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/2 teaspoon black pepper
1 tablespoon sesame oil
2 tablespoons cornstarch
2 tablespoons water
2 tablespoons sliced green onions
1 tablespoon sesame seeds
Place chicken in the bottom of the slow cooker.
Mix sweet chili sauce, soy sauce, honey, rice vinegar, garlic, ginger, pepper, and sesame oil.
Pour the mixture over the chicken.
Cover and cook on low for 5–6 hours or high for 3–4 hours.
Shred the chicken or leave whole pieces.
Mix cornstarch with water to create a slurry.
Stir the slurry into the slow cooker and cook uncovered until the sauce thickens.
Serve over rice and garnish with green onions and sesame seeds.
Vegetables such as broccoli or bell peppers can be added during the final 30 minutes of cooking.
