A rich and cheesy one-skillet pasta dinner with all the flavors of a smash burger—juicy beef, tangy condiments, and plenty of melty cheese.
1 lb ground beef (80/20 recommended)
1 yellow onion, finely diced
2 garlic cloves, minced
2 cups short pasta (elbows, shells, rotini)
3 cups beef broth
1 tsp salt
1/2 tsp black pepper
2 oz cream cheese
2 cups shredded sharp cheddar
1 tbsp ketchup
1 tsp yellow mustard
1/4 cup chopped dill pickles (optional)
In a large skillet, brown beef and onion over medium-high heat until fully cooked (6–8 minutes).
Stir in garlic, salt, and pepper. Cook for 1 minute.
Add dry pasta and broth. Stir well. Bring to a boil, reduce heat, cover, and simmer for 10–12 minutes.
Once pasta is tender, reduce heat. Stir in cream cheese until melted.
Gradually add cheddar, stirring until smooth and creamy.
Mix in ketchup and mustard.
Stir in pickles or use as a topping if desired.
Serve hot.
