Ingredients

4 Persian cucumbers
2 cloves garlic
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1–2 teaspoons chili oil
1 teaspoon sugar
1/2 teaspoon salt

Instructions

  • Wash and slice cucumbers into thin rounds.

  • Sprinkle with salt and let sit for 10 minutes.

  • Pat cucumbers dry and place in a bowl.

  • In another bowl mix soy sauce, rice vinegar, sesame oil, garlic, chili oil, and sugar.

  • Pour dressing over cucumbers.

  • Toss gently until evenly coated.

  • Let sit for 5–10 minutes.

  • Serve topped with sesame seeds or green onions if desired.
