  • lbs chicken thighs or breasts

  • ½ cup Greek yogurt

  • 2 tbsp olive oil

  • Juice of ½ lemon

  • 1 tsp paprika

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • ¼ tsp cayenne pepper

  • Salt & pepper to taste

  • 4 large tortillas

  • 1 cup shredded romaine lettuce

  • 1 tomato, thinly sliced

  • ½ cucumber, sliced

  • ¼ red onion, thinly sliced

  • Optional: yogurt sauce or chipotle mayo

Instructions

  • In a bowl, whisk together yogurt, olive oil, lemon juice, and spices.

  • Add chicken, coat well, and marinate for at least 30 minutes (or overnight).

  • Grill chicken on medium-high heat until fully cooked; rest and slice.

  • Prep vegetables while chicken cools.

  • Warm tortillas to soften.

  • Spread sauce, add chicken and vegetables.

  • Roll tightly, slice, and serve.
