3 cups baby spinach
1/2 cup sun-dried tomatoes, sliced
3/4 cup feta cheese, crumbled
1/4 cup red onion
1/4 cup cucumber
1/4 cup olives (optional)
3 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon red wine vinegar
2 cloves garlic
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Cook pasta until al dente, then drain and rinse under cold water.
