Strawberry Basil Chicken features tender pan-seared chicken breasts topped with a sweet and tangy strawberry balsamic sauce and finished with fresh basil for a bright, savory dinner.
4 boneless skinless chicken breasts
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
3 cloves garlic, minced
1 1/2 cups fresh strawberries, hulled and sliced
1/3 cup balsamic vinegar
1 teaspoon honey, optional
1/4 cup fresh basil leaves, torn
Pat chicken breasts dry and season both sides with salt and pepper.
Heat olive oil in a large skillet over medium heat.
Add chicken and cook 5 to 6 minutes per side until golden and internal temperature reaches 165°F. Remove and set aside.
In the same skillet, sauté garlic for about 30 seconds until fragrant.
Add sliced strawberries and cook 3 to 4 minutes until softened.
Stir in balsamic vinegar and simmer 5 to 7 minutes until slightly thickened.
Add honey if desired and adjust seasoning.
Return chicken to the skillet and spoon sauce over the top. Simmer 2 to 3 minutes.
Remove from heat and sprinkle with fresh basil before serving.
