A creamy and flavorful pasta salad inspired by Mexican street corn, with sweet corn, tangy dressing, and a hint of spice.

Ingredients

12 ounces rotini or elbow macaroni
2 cups corn kernels
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons lime juice
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup red onion, chopped
1/2 cup cotija cheese, crumbled
1/4 cup cilantro, chopped

Instructions

  • Cook pasta in salted boiling water until tender, then drain and rinse with cold water.
  • Let pasta drain completely.
  • Lightly cook or char the corn, then let it cool.
  • Mix mayonnaise, sour cream, lime juice, chili powder, paprika, salt, and pepper.
  • Toss pasta with dressing.
  • Add corn, onion, and cheese, then mix gently.
  • Stir in cilantro and chill for at least 1 hour before serving.
