Tender crockpot chicken cooked in a sweet pineapple and soy sauce glaze with garlic and ginger.

Ingredients

2 pounds boneless skinless chicken thighs or chicken breasts
1 cup pineapple chunks with juice
1/2 cup pineapple juice
1/3 cup soy sauce
1/3 cup brown sugar
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 red bell pepper, sliced
1 small onion, sliced
1 tablespoon sesame oil
2 tablespoons cornstarch
2 tablespoons water
2 tablespoons sliced green onions
1 tablespoon sesame seeds

Instructions

  • Place chicken in the bottom of the crockpot.

  • In a bowl mix pineapple chunks, pineapple juice, soy sauce, brown sugar, garlic, ginger, and sesame oil.

  • Pour the mixture over the chicken.

  • Add bell peppers and onions.

  • Cover and cook on low for 5–6 hours or high for 3–4 hours.

  • Shred the chicken or leave whole pieces.

  • Mix cornstarch with water to form a slurry.

  • Stir the slurry into the crockpot and cook uncovered until the sauce thickens.

  • Serve over rice and garnish with green onions and sesame seeds.

Notes

Fresh pineapple can be used in place of canned pineapple. Vegetables can be added during the final 30 minutes of cooking.
