Taco Mac is a cheesy, one-pot skillet meal that blends all the best taco flavors with comforting macaroni for an easy weeknight dinner the whole family will love.

Ingredients

  • 1 lb ground beef (80/20)

  • 1 small onion, diced

  • 1 bell pepper, diced

  • 2 garlic cloves, minced (optional)

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1 can (10 oz) diced tomatoes with green chiles, undrained

  • 2½ cups beef broth

  • 2 cups elbow macaroni, uncooked

  • 1 cup shredded cheddar cheese

  • 2 tbsp cream cheese OR ¼ cup sour cream

  • 1 tbsp oil

  • Salt and black pepper, to taste

  • Chopped cilantro or green onions, for garnish (optional)

Instructions

  • In a large skillet, heat oil and brown ground beef. Drain excess grease.

  • Add onion, bell pepper, and garlic. Cook until softened.

  • Stir in taco seasoning, diced tomatoes, beef broth, and macaroni.

  • Bring to a boil, reduce heat, cover, and simmer 10–12 minutes until pasta is tender.

  • Stir in shredded cheese and cream cheese or sour cream until creamy.

  • Garnish as desired and serve hot.

Notes

  • Add jalapeños or hot sauce for heat.

  • Use ground turkey or black beans for variation.

  • Reheat with a splash of broth to maintain creaminess.
