Taco Mac is a cheesy, one-pot skillet meal that blends all the best taco flavors with comforting macaroni for an easy weeknight dinner the whole family will love.
1 lb ground beef (80/20)
1 small onion, diced
1 bell pepper, diced
2 garlic cloves, minced (optional)
1 packet taco seasoning (or 2 tbsp homemade)
1 can (10 oz) diced tomatoes with green chiles, undrained
2½ cups beef broth
2 cups elbow macaroni, uncooked
1 cup shredded cheddar cheese
2 tbsp cream cheese OR ¼ cup sour cream
1 tbsp oil
Salt and black pepper, to taste
Chopped cilantro or green onions, for garnish (optional)
In a large skillet, heat oil and brown ground beef. Drain excess grease.
Add onion, bell pepper, and garlic. Cook until softened.
Stir in taco seasoning, diced tomatoes, beef broth, and macaroni.
Bring to a boil, reduce heat, cover, and simmer 10–12 minutes until pasta is tender.
Stir in shredded cheese and cream cheese or sour cream until creamy.
Garnish as desired and serve hot.
Add jalapeños or hot sauce for heat.
Use ground turkey or black beans for variation.
Reheat with a splash of broth to maintain creaminess.
