This Tater Tot Casserole combines seasoned ground beef, creamy mushroom sauce, mixed vegetables, melty cheese, and crispy tater tots for a comforting, family-friendly dinner.
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 (10.5 oz) can cream of mushroom soup
2 cups frozen mixed vegetables
1½ cups shredded cheddar cheese
1 (28 oz) bag frozen tater tots
1 tsp paprika
Salt and pepper to taste
Preheat oven to 375°F and grease a 9×13-inch baking dish.
In a skillet, cook ground beef and onion over medium heat until browned. Drain fat.
Stir in garlic, salt, pepper, and paprika. Cook 1 minute more.
Mix in soup and frozen vegetables. Spread mixture evenly in the prepared dish.
Sprinkle cheese evenly over the beef mixture.
Top with a single layer of tater tots.
Bake uncovered for 40–45 minutes, or until tots are golden and casserole is bubbling.
Let rest 5–10 minutes before serving.
For extra crispiness, broil during the last 3–5 minutes.
