Ingredients

  • 2 lbs ground beef (80/20)

  • 1 cup breadcrumbs

  • 3/4 cup milk

  • 2 large eggs

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 tsp salt

  • 1/2 tsp black pepper

For the Glaze:

  • 1/3 cup ketchup

  • 1 tbsp yellow mustard

  • 1 tbsp brown sugar

Instructions

  • Preheat oven to 375°F. Line a baking sheet or grease a loaf pan.

  • In a bowl, soak breadcrumbs in milk for 5 minutes.

  • Add onion, garlic, Worcestershire, thyme, salt, and pepper.

  • Mix in ground beef and eggs until just combined.

  • Shape into a loaf and place on baking sheet.

  • Mix glaze ingredients and spread half on meatloaf.

  • Bake for 40 minutes. Add remaining glaze and bake 15–20 minutes more.

  • Rest for 10 minutes, then slice and serve.

Notes

  • Use panko for lighter texture.

  • Add chopped veggies for variety.

  • Great for sandwiches the next day.
