1 Top Sirloin Roast, 4 pounds
2 tablespoons olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 cup beef broth
1 onion, thickly sliced (optional)
2 carrots, chopped (optional)
Remove the roast from the refrigerator 1 hour before cooking.
Preheat oven to 450°F.
Pat the roast dry and rub with olive oil.
Season all sides with salt, pepper, garlic, rosemary, and thyme.
Place onion and carrots in the bottom of a roasting pan if using. Set a rack over them and place the roast on top.
Pour beef broth into the bottom of the pan.
Roast at 450°F for 15 minutes.
Reduce oven temperature to 325°F and continue roasting until internal temperature reaches 125°F for medium-rare or 135°F for medium.
Remove from oven and rest loosely covered with foil for 15 to 20 minutes.
Slice against the grain and serve.
