Chocolate cookies rolled in pecans and filled with soft caramel, inspired by classic turtle candies.

Ingredients

1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons milk
1 cup finely chopped pecans
16 soft caramel candies
2 tablespoons heavy cream
1/2 cup chocolate chips

Instructions

  • Preheat oven to 350°F and line a baking sheet.
  • Mix flour, cocoa powder, salt, and baking soda.
  • Cream butter and sugars, then add egg, vanilla, and milk.
  • Combine wet and dry ingredients to form dough.
  • Roll dough into balls and coat with pecans.
  • Press a small indentation into each cookie.
  • Bake for 10 minutes, then press centers again.
  • Fill with melted caramel and bake 2–3 more minutes.

Notes

Chill dough if too soft.
Add chocolate drizzle for extra flavor.
