3/4 cup vegan mayonnaise
1 tablespoon Dijon mustard
2 tablespoons lemon juice
1/2 cup celery
1/4 cup red onion
2 tablespoons parsley
1 tablespoon dill
1/2 teaspoon salt
1/4 teaspoon pepper

Instructions

  • Boil potatoes until tender, then drain and cool slightly.
  • Mix vegan mayonnaise, mustard, lemon juice, salt, and pepper.
  • Add celery, onion, and herbs to dressing.
  • Fold in potatoes gently.
