A crowd-pleasing layered casserole featuring seasoned ground beef, refried beans, corn, sour cream, melted cheddar, and crushed Doritos. Baked to golden perfection for a fun and comforting Tex-Mex dinner.

1 lb ground beef
1 packet taco seasoning
1/3 cup water
1 can refried beans (15 oz)
1 cup corn (drained)
3/4 cup sour cream
2 cups shredded cheddar cheese
4 cups crushed nacho cheese Doritos, divided
Optional: diced tomatoes, green onions, avocado, jalapeños, olives, shredded lettuce

Instructions

  • Preheat oven to 350°F and grease a 9×13-inch dish.

  • Brown the ground beef in a skillet over medium heat; drain fat.

  • Add taco seasoning and water; simmer for 2–3 minutes.

  • Stir in refried beans and corn; cook 2 more minutes.

  • Layer half the crushed Doritos in the bottom of the dish.

  • Spread beef mixture evenly over chips.

  • Layer sour cream on top of the meat.

  • Add shredded cheese evenly over the sour cream.

  • Finish with remaining Doritos.

  • Bake for 20–25 minutes until hot and bubbly.

  • Let rest 5 minutes before serving. Add fresh toppings if desired.
