A crowd-pleasing layered casserole featuring seasoned ground beef, refried beans, corn, sour cream, melted cheddar, and crushed Doritos. Baked to golden perfection for a fun and comforting Tex-Mex dinner.
1 lb ground beef
1 packet taco seasoning
1/3 cup water
1 can refried beans (15 oz)
1 cup corn (drained)
3/4 cup sour cream
2 cups shredded cheddar cheese
4 cups crushed nacho cheese Doritos, divided
Optional: diced tomatoes, green onions, avocado, jalapeños, olives, shredded lettuce
Preheat oven to 350°F and grease a 9×13-inch dish.
Brown the ground beef in a skillet over medium heat; drain fat.
Add taco seasoning and water; simmer for 2–3 minutes.
Stir in refried beans and corn; cook 2 more minutes.
Layer half the crushed Doritos in the bottom of the dish.
Spread beef mixture evenly over chips.
Layer sour cream on top of the meat.
Add shredded cheese evenly over the sour cream.
Finish with remaining Doritos.
Bake for 20–25 minutes until hot and bubbly.
Let rest 5 minutes before serving. Add fresh toppings if desired.
