Ingredients

1 cup feta cheese crumbled
2 tablespoons olive oil
2 garlic cloves minced
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1/4 cup grated parmesan cheese
1/2 cup reserved pasta cooking water
1/4 cup chopped fresh basil or parsley
Salt to taste
Black pepper to taste

Instructions

  • Cook pasta in salted boiling water until tender but slightly firm.

  • Reserve 1/2 cup pasta cooking water before draining.

  • Heat olive oil in a skillet and cook garlic briefly until fragrant.

  • Toss cooked pasta with garlic and olive oil.

  • Add feta, lemon zest, and lemon juice to the pasta.

  • Pour in a little pasta water and mix until creamy.

  • Stir in parmesan cheese and adjust seasoning.

  • Finish with fresh herbs and serve warm.
