A warm and nourishing rice dish made with turmeric, tender chicken, and simple spices for a balanced and comforting meal.

Ingredients

1 pound boneless chicken thighs
1 cup long-grain white rice
2 cups chicken broth
1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon turmeric
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon black pepper
3/4 teaspoon salt
1 carrot, diced
1/2 cup spinach
1 tablespoon lemon juice
2 tablespoons fresh herbs

Instructions

  • Rinse rice until water runs clear.
  • Heat oil and cook onion until soft.
  • Add garlic and ginger, cook briefly.
  • Add chicken and cook until lightly browned.
  • Stir in spices and coat evenly.
  • Add carrot and broth, bring to a simmer.
  • Stir in rice, cover, and cook on low for 15–18 minutes.
  • Rest covered for 5 minutes.
  • Fluff rice and stir in spinach and lemon juice.
  • Garnish with fresh herbs and serve warm.

Notes

Use fresh spices for stronger flavor. Adjust liquid if using brown rice. Add vegetables as desired.
