A fresh and colorful Cowboy Caviar made with beans, vegetables, and a zesty lime dressing, perfect as a dip or side.

Ingredients

1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) black-eyed peas, drained and rinsed
1 1/2 cups corn
1 cup cherry tomatoes, diced
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup red onion, finely chopped
1 avocado, diced
1/4 cup cilantro, chopped
1/3 cup olive oil
1/4 cup lime juice
1 tablespoon red wine vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder

Instructions

  • Drain and rinse beans and peas.
  • Dice vegetables and avocado.
  • Combine beans, peas, and corn in a bowl.
  • Add vegetables and mix gently.
  • Fold in avocado and cilantro.
  • Whisk dressing ingredients together.
  • Pour dressing over mixture and toss lightly.
  • Chill for 1 hour before serving.

Notes

Add avocado last for best texture. Adjust lime juice for brightness.
