1 cup heavy cream
1/2 cup chicken broth
1/2 cup Parmesan cheese
1/2 cup sun-dried tomatoes
3 cloves garlic
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 cups spinach
1 tablespoon cornstarch
2 tablespoons water

Instructions

  • Place chicken in slow cooker and season.
  • Add garlic and sun-dried tomatoes.
  • Mix cream and broth, then pour over chicken.
  • Cook on low for 4–5 hours or high for 2–3 hours.
  • Stir in Parmesan and spinach near the end.
  • Add cornstarch slurry if thicker sauce is desired.
