A sweet and savory chicken dish paired with creamy coconut rice and pineapple glaze for a comforting island-inspired meal.

Ingredients

1 pound chicken thighs
1 tablespoon olive oil
1 cup pineapple chunks
1/2 cup pineapple juice
1/3 cup soy sauce
2 tablespoons brown sugar
2 cloves garlic
1 teaspoon ginger
1 tablespoon ketchup
1 teaspoon cornstarch with water
1/2 teaspoon black pepper
1 cup jasmine rice
1 cup coconut milk
1 cup water
1/2 teaspoon salt
1/2 bell pepper
2 green onions
1 tablespoon lime juice

Instructions

  • Rinse rice and cook with coconut milk, water, and salt.
  • Cook chicken in oil until browned and cooked through.
  • Remove chicken and sauté garlic and ginger.
  • Add pineapple juice, soy sauce, ketchup, and sugar.
  • Simmer and add pineapple and bell peppers.
  • Return chicken to pan and coat with sauce.
  • Stir in cornstarch mixture and thicken sauce.
  • Add lime juice and remove from heat.
  • Fluff rice and serve chicken over rice.
  • Garnish with green onions.

Notes

Use fresh or canned pineapple. Adjust sweetness and thickness to taste.
