Healthy One Pot Broccoli Mac & Cheese is a creamy, lighter comfort dish made with pasta, broccoli, and melted cheese cooked in one pot.

Ingredients

2 cups macaroni
3 cups broccoli
3 cups milk
1 cup broth
1 1/2 cups cheddar
1/4 cup Parmesan
2 tbsp butter
2 cloves garlic
Salt and pepper
Optional spices

Instructions

  1. Sauté garlic in butter.
  2. Add milk and broth.
  3. Cook pasta in liquid.
  4. Add broccoli and cook until tender.
  5. Stir in cheese until creamy.
  6. Season and serve warm.

Notes

Stir frequently and add milk if sauce thickens too much.
