Ingredients

4 cups tomatoes
1/4 cup olive oil
2 tablespoons red wine vinegar
2 cloves garlic
1/4 cup red onion
2 tablespoons basil
1 tablespoon parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon oregano

Instructions

  • Slice tomatoes and place in a bowl.
  • Whisk oil, vinegar, garlic, and seasonings.
  • Add onion to marinade.
