Smoky peri peri chicken served over fragrant seasoned rice for a bold, spicy, and satisfying homemade meal.

Ingredients

2 chicken breasts or thighs
2 tbsp peri peri sauce or seasoning
2 tbsp olive oil
2 cloves garlic, minced
1 tsp ginger, grated
1 tbsp lemon juice
1 tsp paprika
1/2 tsp chili powder
Salt and black pepper to taste
1 cup basmati rice
1 onion, chopped
2 cups chicken stock or water
Optional vegetables (peas, peppers, corn)

Instructions

  • Mix peri peri sauce, oil, garlic, ginger, and spices.
  • Marinate chicken for at least 30 minutes.
  • Rinse and prepare rice.
  • Sauté onion and optional vegetables.
  • Add rice and cook with stock until fluffy.
  • Grill or pan-sear chicken until cooked.
  • Rest and slice chicken.
  • Serve over rice.
  • Drizzle extra sauce if desired.

Notes

Marinate longer for deeper flavor. Adjust spice level to taste. Rest chicken before slicing for juiciness.
