Ingredients

1 1/2 pounds flank steak or skirt steak
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 cup fresh parsley, finely chopped
3 cloves garlic, minced
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Mix parsley, garlic, oregano, red pepper flakes, salt, pepper, olive oil, and vinegar in a bowl. Let sit for 10 minutes.
  • Pat steak dry and season with salt and pepper.
  • Heat a skillet over medium-high heat and add olive oil.
  • Cook steak 3–5 minutes per side until desired doneness.
  • Rest steak for 5–10 minutes before slicing.
  • Slice against the grain and serve with chimichurri sauce.
