A soft, chewy confection made with tart rhubarb, sugar, and starch, finished with a light powdered coating.

Ingredients

3 cups chopped rhubarb
1 1/2 cups sugar
1 cup water
1/4 cup lemon juice
1 cup cornstarch
1/2 teaspoon vanilla
1/2 cup powdered sugar
2 tablespoons cornstarch

Instructions

  • Cook rhubarb with water until soft.
  • Blend into a smooth puree.
  • Heat sugar, water, and lemon juice until dissolved.
  • Mix cornstarch with water to form a slurry.
  • Add slurry to syrup and stir continuously.
  • Stir in rhubarb and cook until thick.
  • Pour into a lined pan and smooth the top.
  • Let set for several hours or overnight.
  • Cut into cubes and coat with powdered sugar.
