Slow Cooker Chicken Burrito Bowl is a hearty one-pot meal with tender shredded chicken, seasoned rice, beans, and bold spices.

1 1/2 pounds boneless, skinless chicken breasts or thighs
1 cup long-grain white rice
2 cups chicken broth
1 can (15 ounces) black beans, drained and rinsed
1 cup corn
1 can diced tomatoes with green chilies
1 small onion, chopped
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup shredded cheese
1/4 cup cilantro
1 avocado (optional)
1/2 cup sour cream (optional)
Juice of 1 lime

Instructions

  • Rinse rice and prepare all ingredients.
  • Add rice to the slow cooker as the base layer.
  • Add onion, garlic, beans, corn, tomatoes, and spices.
  • Place chicken on top and drizzle with olive oil.
  • Pour in broth and cover.
  • Cook on low for 4–5 hours or high for 2–3 hours.
  • Remove chicken, shred, and return to the cooker.
  • Stir in lime juice, add cheese, and let melt before serving.

Notes

Adjust spice level with extra chili powder or mild tomatoes. Add toppings just before serving for best texture.
