Teriyaki Pineapple Chicken and Rice Stuffed Peppers combine sweet pineapple, savory chicken, and seasoned rice in tender roasted bell peppers.

Ingredients

4 bell peppers
1 lb chicken
2 cups cooked rice
1 cup pineapple
1/2 cup teriyaki sauce
1 tbsp sesame oil
2 garlic cloves
1 tsp ginger
2 green onions
1/2 tsp salt
1/4 tsp pepper

Instructions

  1. Prepare and hollow peppers.
  2. Cook chicken in a skillet.
  3. Add garlic, ginger, and teriyaki sauce.
  4. Stir in rice and pineapple.
  5. Fill peppers with mixture.
  6. Bake until peppers are tender.
  7. Garnish and serve.

Notes

Do not overfill peppers to prevent splitting during baking.
