Thin zucchini slices rolled with a creamy cheese filling and baked in a savory tomato sauce.

Ingredients

3 zucchini
1 cup ricotta
1 cup mozzarella
1/4 cup Parmesan
1 egg
2 cloves garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon basil
1 cup marinara
1 tablespoon olive oil

Instructions

  • Preheat oven to 375°F.
  • Slice zucchini thinly lengthwise.
  • Salt and pat dry.
  • Mix cheese, egg, garlic, and seasoning.
  • Fill and roll zucchini slices.
  • Place in baking dish with sauce.
  • Top with more sauce and oil.
  • Bake covered 20 minutes, then uncovered 10–15 minutes.
  • Cool slightly and serve.

Notes

Slice zucchini thin for easy rolling.
Remove excess moisture for best texture.
